Yes, you can do that but Nous'che just plays a normal G-7 ( check the diagrams in the real book for "Clair de Lune") and lets the bass player play that F. Stochelo plays a G- with a Bb in the bass (6X578X) to create some distance between his bass note and the bass note of the double bass.
