Daphne is a great song, but if you're looking for the easiest one it would be "Honeysuckle Rose" followed by "Gypsy Groovin" and "All of Me".
Yikes. I have a problem of just sticking to one all the way through. I can play a chorus "+" of Daphne, a chorus of All of Me, all of Dolores, and a smattering of others. I like Daphne because, well, I like it; because it's rhythm changes in D, so thought this would be helpful in a lot of other tunes; and because of its use of octaves...and mine aren't the cleanest, let's just say.
Seems like Honeysuckle comes up a lot, yes, Christiaan? I do see the harmonic structure is straightforward and it seems like there's a ton of useful stuff in there, from your transcription...so, if I can tie one leg down, I might actually benefit from your advised approach of biting off 2-8 measures, get a whole tune, then up to 80% speed, then move on...!
